For breakfast, I made blackened chicken hearts and gizzards with roasted turnip fries. The
gizzards were boiled, sauteed with onions, tomatoes, and red bell pepper in EVOO, and then tossed in chili powder and broiled. The turnips were chopped, tossed in EVOO, salt, and pepper, and then roasted, served with cold avocado. The gizzards were actually pretty good once they softened up. The hearts are juicy
, but you're lucky if you get 3 or 4 per lbs. The turnips we
re crispy and reminded me of asparagus for some reason.
Honey Oven-Baked Dove with Brussels Sprouts
I wasn't very hungry around lunch time,
but I did have a small dove breast in
the fridge. I gave it a honey glaze and baked it with onion, garlic, tomato, and Brussels Sprouts. It made a nice snack. Dove meat is most similar to dark turkey, but by itself, it isn't much of a meal. The sweetness of the honey paired well with the chewiness of the baked sprouts and the onions.
Beer & Coffee Stea
k with Baked Sweet Potato
I found two pounds of quick sa
le steak for dirt cheap. It wasn't top shelf, but meat is meat (my grassfed, primal friends may disagree.) I soaked the steak in Yuengling's Lager and a little hot sauce for a few hours, and then tossed it in a spice mix of coffee, cayenne pepper, chili powder, and pepper, and cooked in the oven for a little bit. A served with a sweet potato with REAL unsalted butter. Because the steak was thin, it dried out and got a little tough. I know now to avoid that. It was delicious nonetheless. And I'm addicted to sweet potato, so that made up for any shortfall in the steak.
